In China, for 1 kilogram of shiitake, the producer gets 1 dollar 20 cents. In Europe – from $6 (and a kilogram of shiitake can cost over $16 in the supermarket). So, in China, the champignon producers get bigger margin – while in Europe, the shiitake producers. One log of substrate from Exotic Mushroom Center in Europe now costs $1.9 net, usualy producers get 06.-0.7 kg of mushrooms from a log.

In Romania 93% of mushrooms produced are button, and 7% are oyster mushroom. There are two largest button mushroom producers – Boglar Champ and Iazul V&V. And nearly ten smaller producers of button mushrooms, plus number of producers of oyster mushrooms.

There is a global trend visible also in Hungary that large mushroom farms expand – and many smaller ones (including those in caves, popular for Hungary) leaving the market. In the Budapest area, there are mushroom farms located in caves that were created because the stones from there were used to build the city itself. Mushrooms were grown in many of such caves for years. Currently, the profitability of such mushroom farms is declining and they by degrees close.
