Jake Waalk lives in Japan. He is an American immigrant. He is an editor of Japanese Exotic Mushroom Journal – media for Japanese mushroom producers. As well he is working for SALAI International Japan. Jake is consulting clients outside of Japan who are interested in using Japanese production systems to grow exotic varieties of mushrooms, including oysters, lion’s mane, and shiitake.Â

Japan is in Top-5 mushroom producers in terms of volumes.
They produce different kinds of mushrooms. Use bottle system as well as shelf system.
The trickiest thing now – Japan aims to wean itself from dependence on Chinese imports.
As well they have so large summer drop of demand on mushrooms that for example enoki farmers cut their production by 50% between May and August. However clever Japanese mushroom producers work on this.
And as Jake tells – there are so many things in Japanese exotic mushroom production system which in Europe and America we for sure would gladly implement to our farms – if we just knew about them. As in Japan they do know what efficiency means.
