Course Curriculum

Day 1

Introduction | Raw Materials

  • Selection and analysis of raw materials: detailed breakdown of straw characteristics (moisture, length, structure, storage) and nitrogen sources (dry and liquid poultry manure, alternative additives).
  • Key laboratory analyses: practical methods for measuring moisture (using a microwave), pH, ash content, nitrogen, and carbon.
  • Creating the ideal mix formula: calculating nutrient balance and optimizing the carbon-to-nitrogen (C:N) ratio to achieve the perfect compost structure.
Day 2

Bunker Systems & Fermentation

  • Mixing process and work schedule: setting soaking and turning timings, achieving mixture homogeneity using manual and automated lines, adding gypsum and urea.
  • Management of closed bunkers: controlling temperature, oxygen levels, and moisture using aeration nozzles and high-pressure fans.
  • Fundamentals of Phase I (Fermentation): creating nutrients for mushrooms, ensuring proper bacterial activity, and minimizing ammonia loss.
Day 3

Phase II Pasteurization | Tunnel Systems

  • Phase II tunnel equipment: studying the design of tunnels (low and high pressure), concrete floors with aeration channels, and air handling units (AHU).
  • Proper compost filling: using hoppers and cassettes to ensure an even compost level and prevent uneven airflow.
  • Pasteurization process (Conditioning): managing air recirculation and temperature to destroy competitive bacteria and molds, as well as effectively removing ammonia.
Day 4

Phase III & Quality Control | Mycelium Colonization

  • Goals of Phase III (Incubation): preparing the ideal structure, proper pH level, and nutrients for massive mycelium growth.
  • Quality control: key practices for managing temperature, humidity, and oxygen levels to reduce contamination risks and optimize growth.
  • Efficient operations: tunnel rotation, maintaining a sterile environment, and methods to achieve yields of 34-36 kg/m² and higher.
Day 5

Facility Management | Operations & Wrap-up

  • Logistics and compost yard management: organizing the movement of raw materials between Phase I, II, and III zones to reduce production costs and increase efficiency.
  • Adaptation and troubleshooting: adapting composting technologies to different climatic conditions (based on Omar Haqqi's experience) and eliminating technological instability.
  • Wrap-up: final Q&A session with the expert, discussion of observations at the SouthMill Champ facility, and the UMDIS certificate award ceremony.
