Course Curriculum

Module 1: Composting Technology (Days 1–3)

Day 1

Physiology of Raw Materials, Recipe Calculation & Phase 0 (Pre-wetting)

  • Biology & Selectivity: Agaricus bisporus as a secondary decomposer (saprotroph); biochemical barriers against competitive moulds.
  • Biological Scale: Meeting microflora requirements for O2, moisture, and nitrogen in closed bunkers and tunnels.
  • Raw Materials: Wheat, rye, or barley straw properties; broiler chicken manure and horse manure mixture parameters.
  • Recipe Formulation: Precise Carbon-to-Nitrogen (C:N) ratio calculations; avoiding anaerobic zones.
  • Mineral Nitrogen Risks: Benefits and structural dangers of synthetic nitrogen (urea, ammonium sulphate).
  • Gypsum & Water: Calcium sulphate dosing for flocculation and pH reduction; utilizing compost yard drainage water.
Day 2

Active Fermentation, Pasteurisation & Phase I & II Control

  • Biochemical Reactor (Phase I): High-temperature biological windows (70–80°C) and ammonia release for straw softening.
  • Nitrogen-Lignin-Humus Complex: Binding volatile ammonia with degraded lignin for safe nutrition.
  • Aeration Methods: Forced vs. passive aeration in bunkers/piles to eliminate toxic anaerobic zones.
  • Phase II Tunnels: Implementing temperature curves to destroy pathogens and convert ammonia into microbial protein.
  • Ready-state Verification: Organoleptic checks (visual, tactile, smell) and practical "Squeeze Test" moisture evaluation.
  • Ammonia Monitoring: Instrumental verification using Dräger indicator tubes or digital sensors.
Day 3

Spawning, Incubation & Peat Casing in Poland

  • Spawning Hygiene: Strict disinfection, formalin solutions, and even distribution of grain spawn (rye/millet).
  • Spawn Run Microclimate: Protection protocols against thermal stress and competitor weeds in cultivation rooms.
  • Phase III Incubation: Target parameters for aggressive mycelium growth and physical indicators of complete colonization.
  • Peat Casing Mixes: Blending high-quality sphagnum and black peat in Poland; calcium sources for structure stabilization.
  • pH Regulation: Sugar beet lime or chalk additions to establish stable alkaline environment (blocking Trichoderma).
  • Chemical Disinfection: Formalin treatment of casing soil to destroy hidden pathogens and wild spores.
  • CACing & Watering: Mixing Phase III compost (Cac'ing) to accelerate colonization; deep watering without clogging pores.
